Hi Friends, when I was working, fried rice vermicelli garnished with shallots was my favorite breakfast bought for me by the tea lady named Ah Kam in my office,

I always remember this tasty dish cooked with just 3 ingredients,  rice vermicelli shallots and dark soy sauce. As I enjoy savoring this dish, I am glad to share this recipe with You.

The successful of this dish depend on the texture of rice vermicelli after soaking with boiling water, as it has to heat up again and stir fry after mixing the condiments to it.

To spice up this fried vermicelli with more delicious flavors, I have added vegetable spring rolls.

Kindly take note of the cooking shallots method as they enhance the flavor of fried rice vermicelli.

(I) Fried Rice Vermicelli with Shallots

Fried Rice Vermicelli with Shallots and Vegetable Spring Roll Recipe

Ingredients :
– Rice Vermicelli : 300 grams
– 10 shallots
– Shallot oil : 2 tbsp (after frying shallots)
– Dark soy sauce : 4 tbsp
– Light soy sauce : 1 tbsp
– Vegetable seasoning : 1/2 tsp
– Cooking oil : enough for frying shallot

Cooking Shallots Method

(1) Cut shallot into thin slices,  fry them until golden brown. Drain oil from fried shallots, set aside.

Tip: Store fried shallots in a glass container and keep in refrigerator. The shallots will remain crispy.

Cooking Method :

(1) Soak rice vermicelli in hot water until soft. drain water thoroughly, transfer to frying pan.

(2) In the frying pan with rice vermicelli, drizzle 2 tbsp of shallot oil, 4 tbsp of dark soy sauce, 1 tbsp of light soy sauce, 2 tbsp of fried shallot, 1/2 tsp of vegetable seasoning.  Mix and toss all ingredients until rice vermicelli uniformly absorbs the dark soy sauce.

(3) Turn on the heat, stir fry all in the ingredients in the pan, until they are hot and fragrant.

(4) It  is tasty and flavorful to garnish fried shallots and parsley before serving.

(II) Vegetable Spring Rolls

Vegetable Spring Rolls Recipe

Ingredients :
– Spring roll pastry
– Carrot : cut into strips
– Cucumber : remove seeds and cut into strips
– Dry mushroom : soak until soft and slice into strips
– Bean curb : With some soy sauce, fry until brown and slice into strips
– Beaten egg : fry and slice into strips
– Cooking oil : enough for deep frying vegetable spring rolls

Cooking Method :

(1) With each spring roll pastry, put in 3 strips each of the ingredients, roll and wrap all the ingredients.
