Yummy Grilled Satay Chicken Mini Patties with Peanut Sauce Recipe

Grilled Satay Chicken Mini Patties dip with Peanut Sauce is very Yummy to eat with Lontong (ready-made white Rice wrap with Banana leaf) and crunchy Salads like raw onion, cucumber, sweet and sour pineapple cubes.

Yummy Grilled Satay Chicken Mini Patties Recipe

Recipe of Grilled Satay Chicken Mini Patties

Ingredients :
– Chicken thigh (Skinless, boneless and minced) :  500 grams

Marinades :

  • Lemon juice : 2 tbsp
  • Shallots : 4 cloves
  • lemon grass (1 stalk)
  • Coriander powder : 3 tbsp
  • Turmeric powder : 1/2 tsp
  • Korma Mix : 1 tbsp
  • Corn oil (or cooking oil) : 3/4 cup
  • Sugar : 100 grams
  • Light Soy Sauce : 2 tbsp
  • Salt : 1/2 tsp

Note: The ingredients of Korma Mix are Coriander Cumin, Fennel, Black  Pepper, White Pepper, Cloves, Star Anise and Cinnamon.


(1) Mince chicken meat and mix in 2 tbsp of Lemon, set aside.

(2) Blend shallots and lemon grass together with water to half cover the ingredients,  blend into paste. 2 table spoons required.

(3) Marinate minced chicken meat with all marinades ingredients for overnight in the  refrigerator  (or at least 2 hours in the refrigerator).

(4) Grease the baking tray and ready for grilling.

(5) With plastic gloves,  scoop a table spoon of marinated chicken meat, shape into mini patty ( or desired shape and size) and place onto the greased tray.

(6) Repeat STEP 5 until all the meat ingredients used up.

(7) Covered with an Aluminium Foil, Oven grill at 250 degree C for 20 minutes. (Note :  covered with Aluminium Foil to enhance moisture of the meat)

(8) When done, turn the patties and brush with oil, grill  without Foil for another  20 minutes or until golden brown.

(Please note that time for cooking and browning may vary with different Ovens.)

Ingredients  (A) :

  • Cooking Oil : ½ Cup
  • Shallots (3 pieces)
  • garlic (3 cloves)
  • Lemon grass : 1/2 stalk
  • Candle Nuts : (5 pieces)
  • Coriander powder : 1 tbsp
  • Korma Mix : 1 tbsp
  • Turmeric powder : 1/2 tsp
  • Chilli paste : 1 tbsp

Other Ingredients:

  • Water : 2 cups
  • Coconut powder : 3 tbsp
  • Peanut butter with crunchy nuts : 3 tbsp
  • Sugar : 100grams
  • Salt (to taste)
  • Fried peanuts flakes : 100 grams


  1. Blend shallots, garlic, lemon grass and candle nuts together with water to half cover ingredients, blend into paste, 2 table spoons of blended mixture required.
  2. Add ingredients A into ½ cup of oil and stir fry over medium to low heat until fragrant.
  3. Add in 2 cup of water, stir in coconut powder, peanut butter, sugar and salt until they are dissolved and the sauce thickens.
  4. When ready to serve, add in fried peanuts flakes.
